The Classic Pancake with Lemon

Ingredients:

– 110g plain flour
– 2 eggs
– 200ml milk
– 75ml sparkling water
– 50g butter
– pinch of salt

Method

Sift the flour and salt into a large mixing bowl with a sieve held high above the bowl (this helps the flour gets an airing!). Next, make a well in the centre of the flour and break the two eggs into it before whisking and slowly incorporating the flour from the edges. Mix together the milk and the sparkling water and gradually add to the mixture and whisk until smooth.

Melt the butter in a pan then add two teaspoons into the batter. Carefully pour the rest of the butter in a bowl and use to grease the pan for each pancake.

Make sure your pan is really hot and then turn the down the heat to medium (TIP: it’s always best do start with a test pancake to check you’re using the right amount of batter!) Once you’ve poured in the batter, sway from side to side to evenly coat the pan. Cook for a minute or until golden before flipping! Wait 20 seconds before sliding out the pancake onto a serving plate.

To serve, squeeze some lemon juice and caster sugar on the pancake before rolling. Add extra lemon and sugar as desired!

The Sweet Tooth’s Dream

Ingredients:

– 150g plain flour
– Pinch of salt
– 2 teaspoons baking powder
– 4 tablespoons sugar
– 2 tablespoons butter
– 230ml sparkling water
– 1 egg

Method:

Gently sift the flour into a bowl before mixing in the salt, baking powder and sugar. Then, in another bowl lightly beat the butter, water and egg.

Combine the dry mixture and the liquid mix until you get a smooth soft batter. Turn your pan to a medium heat before adding some butter. Pour the batter into your pan and cook until nice and bubbly! Flip over and cook until for another minute or two until golden.

Slide the pancake onto a serving plate before squeezing a good dollop of toffee sauce (or maple syrup) and some fresh fruit – strawberries and blueberry add a hint of sharpness to this sweet dish!

Vegan Sparkling Water Pancakes

Ingredients:

– 150g plain flour
– Pinch of salt
– 1 ½ bananas mashed
– 2 teaspoons baking powder
– 2 teaspoons sugar
– 1 tablespoon of nut butter
– 60ml sparkling water
– 100ml almond milk
– 1 Teaspoon vanilla extract

Method

Blend the mashed banana with almond milk, sparkling water, nut butter and sugar. Next, combine the flour, vanilla extract and baking powder before gradually adding to the mixture – gently mix into a soft doughy consistency. (TIP: leave your mixture for 10 minutes to properly combine!)

Pour the batter into your pan and cook until you see bubbles appear. Flip over and cook until for another minute or two until golden. Slide pancakes onto a serving plate before adding your toppings! This works great with some banana and strawberry! Try adding some granola for a bit of crunch!
